Vegan Bircher Muesli

What a wonderful way to start a Monday. This has to be prepared the night before so it saves so much time in the morning. This is gut friendly as the oats are soaked overnight so it is

easier to digest. It is also full of fibre, plant-based protein and vitamins and minerals.


SERVES 1

INGREDIENTS



· 25g porridge oats · 1 teaspoon chia seeds · 1 teaspoon milled flax seeds · 1 teaspoon hemp seeds · 50g soya yoghurt · 1 eating apple, grated · 1/8 teaspoon ground cinnamon · Spoonful soya yoghurt (to serve) · Pumpkins (to serve)

· Blueberries (to serve)

METHOD

  1. In a bowl combine the porridge oats, chia seeds, milled flax seeds, hemp seeds, yoghurt, grated apple and cinnamon.

  2. Stir until combined and then cover and leave in the fridge to soak overnight

  3. The next morning spoon the muesli into a bowl. Top with a spoonful of yoghurt and sprinkle with pumpkin seeds and blueberries. Eat immediately.
