Vegan stroganoff

This recipe is very quick and easy. Use what you have in your fridge.


SERVES 1

· Rice, pasta or quinoa for 1

· Olive oil

· ½ shallot

· 1 clove garlic

· Mixed veg of mushroom, courgette, broccoli, carrot & cherry tomato

· plant-based protein (tofu, beans or lentils etc)

· 1 teaspoon of paprika

· ¼ teaspoon of Dijon mustard

· ½ teaspoon of soya sauce

· 50ml white wine

· 50ml plant-based milk

· Squeeze of lime to taste


METHOD

  1. Cook the rice, pasta or quinoa according to the packet

  2. Heat olive oil in a large frying pan and stir-fry the shallots until soft. Add the garlic and stir through.

  3. Add the rest of the veg and stir-fry until soft enough for you. Stir through the paprika, mustard and soya sauce. Pour in the white wine and milk and season. It’s ready when almost boiling.

  4. Plate up your rice, pasta or quinoa and put stroganoff on top. Squeeze lime on top.
