Ingredients:

130g walnuts

Olive oil

½ small onion finely chopped

1 bay leaf
-
2 small pieces of cinnamon bark from a cinnamon stick

3 cardamom pods
-
1 tablespoon of garlic & ginger paste

½ teaspoon cumin
-
1 teaspoon garam masala
-
¼ teaspoon turmeric
-
¼ teaspoon chilli
-
4 tablespoons tomato paste
-
¼ to ½ cup of water

1 tablespoon lemon juice

Salt & pepper to taste
Directions:

Place the walnuts in a food processor and pulse a few times until crumbly. Don’t go to a powder as you need to soak them and it will wash away when you drain it.

Put walnuts in a bowl and cover with lukewarm water for 15-20 mins, drain.

Heat some olive oil in a frying pan and sauté the onions for approx. 5 mins. Add bay leaf, cinnamon bark and cardamon pods. Cook for another min.

Add garlic & ginger paste and spices then add the walnuts. Toss and cook for 2 mins.

Add the tomato paste, water and lemon juice and season. Continue cooking until the mixture thickens.

Serve in taco shells with salad, vegan plain yoghurt, guacamole and vegan cheese.
You can even use this to make nachos or fajitas.
